Today I had a doctor's appointment at the office of a world renowned breast cancer specialist, Dr. John West. The first time there there, 12-years ago, there were women from several different countries as well as those locally in the large waiting room. I was there today to just rule out problems and they seem to be ruled out at this point. I go each year since my mom had breast cancer 30-years ago. Today I visited their boutique shop within their lobby. It has a glass front and beautifully displayed items, it's welcoming, discreet, and inviting. It's where women can purchase wigs (there is a private try-on room), scarfs, hats, purses, a bit of jewelry, several meaningful affirmation courage gifts, and, today, this amazing cookbook, Delightfully Free. It's about Healthy Living and I can't help but share my finding with YOU, the readers I value so much. The girl behind the counter is going through her second round of Breast Cancer treatment and shared that with me as she helps me with my purchases. Her first round was just 2-years ago and she was smiling and helpful and positive. 
That was a whole lesson within itself.

Since my passion is about sharing what I learn with YOU....I couldn't help but share this amazing recipe from the amazing Author of this book, Tracy Hill, whom I have never met nor seen in person but I want to at some point. She is also passionate about Healthy Living and she loves desserts! She is my kind of woman. I hope you look into purchasing her cookbook because it's nothing but healthy! Today I will share a one of her recipes: "Smoky chipotle in a hearty soup of spicy meatballs and black beans is a satisfying meal complete with dark green vegetables and all of the goodness of legumes." 

Chipotle Meatball Soup
24      Chipotle Meatballs (made from ground turkey)
64 oz Chicken stock or broth
1 Lg   Yellow or brown onion, chopped (3 cups)
4 C.    Chopped kale, moderately packed, (5 full leaves)
3 Lg   Cloves of garlic, chopped
8 oz    Tomato Sauce
3         Medium tomatoes, chopped or 1  14oz can of     tomatoes, un-drained
1 t.      Sea Salt
1/2-1   Smoked chipotle chili powder, to taste
2/3 C.  Cooked brown rice
1         15 oz black beans, drained

In a 6-qt soup pot, bring the chicken stock or broth to a boil. Add the onion, kale and garlic. Cover, reduce heat to medium-low, and cook 15 minutes. Stir in the tomato sauce, tomatoes, salt, chipotle chili powder, rice beans and meatballs. Cover and simmer just until heated through. Serve immediately. 

It's a quick delicious recipe and I will be serving it tomorrow night. You have an open invitation! Bon Appetite
